After Taste, Volume II — The Science of Nourishment — is the second of a projected seven. By the design of the series, each volume is dressed in the manner of a slightly later age than the one before it; where the first wore the character of a Victorian naturalist's compendium, this second is set as a late-Victorian and Edwardian scientific work — the age of the calorimeter and the vitamin hunters. The plates were drawn as original engravings for this volume; none reproduces any existing work. Compiled and set by the AICE Press in the year MMXXVI, for a patron who asked only that it be both true and a pleasure to read.
